Yum! Everyone knows only the really crappy chorizo does NOT contain salivary glands and lymph nodes! Just like Abuelita Croissant used to make!

I detest most of the mass-market chorizo that uses imitation lymph nodes!

They use imitation lymph nodes because the artificial lymph nodes are too expensive, for sausage.
