Actually if this post was CHinese ideology, it would be called 'the three forgets'.

Thai chicken three ways.

It doesn't have any chicken in it but I can't remember what it does have in it. I can't remember what it's called in Thai. I can't remember what is in it.

Can anyone help me?

Never heard of it, although I'd guess it probably involves tofu.

No tofu!

It's called gai sahm yang and I'm going to make it at the weekend.

5 lemongrass stalks, finely sliced
5 tablespoons shredded young ginger
5 large red shallots, sliced
2 limes, diced
10 coarsely chopped bird's eye chillies
1/2 cup dried prawns (shrimp)
1/2 cup deep-fried cashew nuts

Arrange all ingredients in separate piles on a platter and serve.

#3(MB).Perhaps you might consider adding one additional aromatic ingridient which is "wild pepper vine" leaves to use as a wrap or as a base.

That appears to be a popular way this savoury dish is presented/served in most Thai style resturants and hawkers food outlets in many SE Asian countries.

Your recipe of using deep fried cashew nuts sounds much nicer than the more common run of the mill deep fried or roasted peanuts served in the resturants out here.

Myanmarbound - that sounds amazing. How finely do you have to dice the limes?
