Fragrant Coconut Rice

I just experimented with this tonight and it turns out fine :)

Those who have travelled in South East Asia, you'd probably have eaten this aka. Nasi Lemak for breakfast. Its condiments of fried firm tofu, fried tempeh, fried egg sunny side up, fiery sambal, fried fish, fried crispy anchovies and groundnuts, fried chicken wings, sliced fish cakes, sliced cucumbers and .......... yummy!

It's easy to make:

1 cup Thai jasmine rice - washed until water runs clear
1/2 cup thick coconut milk
3/4 cup water
1/2 teaspoon salt
3 screwpine leaves tied into a knot [optional]
a knob of old ginger, peeled and bruised [optional]

Dump everything in a rice cooker. Finis!

All you need to complete the dish is a good sambal with chilli paste fried with shallot paste ,"belacan"(fermented shrimp paste) and "petai" beans(stink beans).Add some of the fried anchovy(ikan bilis) and fry together with the sambal.By the way I am eating this very dish right now in Penang island, Malaysia in a hawkers store.Enjoy!

Malaysia's version is absolutely fantastic! I still remember having too condiments to choose from a street hawker in KL. Penang is a food haven badaa badaa badaa :)
