Is there a use for it?
I bought some ‘posh’ tinned fish from a nice deli recently (tuna, anchovies, octopus etc) and wondered if anyone else had any ideas for using the oil one pours off? It’s mostly good virgin olive oil, often flavoured with lemon, peppercorns or chillies so it seems there must be a use for it but as it’s had fish steeped into it I can’t just use it for salad dressing etc.
The only idea I’ve come up with so far is to use it to sweat the onions in for a fish or shellfish-based risotto. Or just chuck it I guess.
