I lived on a Greek island for 6 months. The lamb started out tender and delicious but by the beginning of June it has turned tough so it had to be long cooked rather than grilled. Athens would undoubtedly have better supplies of lamb.
I was going to suggest a slow cooked shoulder of lamb but obviously this is no longer wanted.
