Sigh,

We just had a rather large dinner party with 50 guests and seems like we bought a little extra.

I have 6 whole tilapia, 3 footlong pork tendeloin and about 20 chicken breasts left over. Oh, and 17 chinese egglplant.

I suppose we could freeze some of it, but is there some kind of dish that would incorporate them all?

Think of it as an iron chef like challenge.

That is a very good question- I have never incorporated those three in one dish before. Sounds like it woud be protein overkill though...

Freeze most of it now -- sounds like you'll have meal ingredients for a few months. Some of it could be combined as a Louisiana Gumbo or Jambalaya. Here are a couple recipes to use as a base.

Jambalaya


Take your initial estimate, double that and add 20 percent.
It always takes more time and money than you think it should.

Not a dish but posh menu of fish starter and then pork tenderloin with some accompaniment.

or you could do an indian style aubergine pickle with your chinese eggplants and freeze the meat and fish in portions.

Fish and pork is hard to combine. I'd have either or.
But, pork and chicken breasts can certainly be used in a French type dish I saw in a cooking programme. There was even lamb in it. All cooked together as a caserole, with leeks and carrots, in a big clay pot.
