What are some other good veggies to go with bacon/ham/sausage/steak & Eggs.

So far I've tried grilled tomatoes, mushrooms and onions.

Anything else?

Yes, those are good in an omelette.

I'm determined to fill 1/2 my breakfast plate with veggies. Asparagus and broccolli would be good with Hollandaise sauce.

Why not fruit? Doesn't go very well in an omelet, but if you are aiming at a more healthful diet, it's a good deal. Doesn't have to be an orange. I had a bowl of strawberries this morning.

Don't forget that glass of tomato juice or V-8.

Spinach & mushroom omelet is good. Sauté the mushrooms, then add spinach & let it wilt down. I can think of other things to do with spinach, but they involve, you know, actual cooking.

Chiles are good on scrambled eggs or omelets. Buy some fresh salsa (not canned or jarred) and dump it on. Add avocado slices.

Asparagus omelet.

You think of chives and parsley as herbs, but both are loaded with healthful stuff like vitamin A & C. Add a generous couple of tablespoons to eggs before scrambling or omeletting.

Zucchini fritatta. That also involves actual cooking.

Be British & serve baked beans.

Mmmm... Baked beans....My grandparents did that for breakfast..They're were Quebecers. They're very mild beans thoujgh. I can't describe them..almost like a refried bean taste but not mashed, if that makes any sense.

I was going to say spinach in omlets but nutrax was faster.

Peas would be good with eggs/breakfast meats.

Bananas, french toast and bacon, with maple syrup.

Spinach and eggs with hollandaise sauce is very nice especially if you add some bacon or salmon.

A different twist on the fries/hash browns is to use kumara or sweet potato.

Corn on the cob.

A search on breakfast vegetables comes up with a list of sites with ideas - I liked a couple of the ones here that included shredded zucchini in pancakes. I'd make waffles, since I'm a lousy pancake-maker too impatient and turn them too soon. And roasted (microwaved for me) sweet potato mashed and used as spread on toast - with butter or cream cheese or maple syrup or cinnamon-sugar.
