I enjoyed several dishes at a tapas restaurant recently. Their halloumi salad was a great bright-flavored foil against the heavier mushroom flavors in another item. Here's their description:
Mixed baby greens, sautéed halloumi cheese (firm-textured sheep's milk cheese) and grapes (red & green, halved)
served with a lime and caper vinaigrette

Roasted veggies on skewers (mushrooms, peppers, little pieces of onion, etc) arranged in a colourful manner
Vegetables 'purée': spinach, leek, a bit of onion, a medium potato, 2 or 3 carrots, a 'blanched' tomato all boiled first and then put in a blender to get a creamy liquid. You can use some of the water in which veggies have previously been boiled if you like it more liquid. You can also add some cream cheese whilst boiling veggies. I would always finish with a dash of olive oil and salt and white pepper.
