The Japanese say that a long fight causes the quality of the flesh to deteriorate, something to do with oxygenation or something.

Funny you should mention that, Vinny. There was an Asian guy on the boat that day. I took him to be Japanese, but who knows and who cares. He stuck out to me after a while. He had all the rough sea gear, all the food, all it takes to do one of these long distance tuna runs. We'd troll at 12 knots, and he's standing there eyeballing the live anchovies. Looking through his high-visibility yellow lensed glasses for the best wiggler to spear on his hook for when a school of tuna is hooked up from trolling. He was the first one in the water with his bait, and he caught the most fish that day.

At the end of the day, he offered to share his catch.

That was cool.

vinny as the muscle is overused a state of oxygen depravation exists and lactic acid quickly builds up. some feel that this tends ro subtract or ruin the flavor of game and game fish that are not quickly captured and dispached

My guests didn't seem to mind that my grilled fresh albacore fillets were infused with lactic acids and suffered from oxygen deprivation. Hey, I can't help it if that tuna didn't want to go home with me.

By the way, it was gooood.
