We will be spending a couple of months in Spain and Portugal April/May mainly staying in hostels and cheaper hotels. Flexible and taking it as it comes. But we would like to spend some time just relaxing in a more up market hotel or resort toward the end of our trip. A beach would be nice but not necessary. This would be in southern Spain Portugal area. Willing to spend a bit but not extremes. Do anyone have particularly good experience they can share.

You have no idea of actual location? No idea of facilities you require? We have no idea what you mean by up market. So just go to the likes of Booking, KAYAK, Priceline, HotelsCombined etc etc
without the specific details, I would suggest looking into the Paradores (Spain) / Pousadas (Portugal) hotels, which you will almost always find in extraordinary locations (old monasteries, mansions etc.), with their high-level kitchens focusing on regional cuisine - and imo still not extraordinarily priced.
up market hotel or resort
From the above remark I get the feeling that some up market hotels could be to "stuffy"

Thanks for taking the time to reply. Location is anywhere in southern Spain or Portugal - end of May. Something with facilities better than better than a typical hostel or cheap hotel. Beach would be nice but not necessary. Do you have an experience you could share? If you can't think of anything that's ok. You don't need to reply. Thanks for the suggestions from other posters. I will try those links. I have checked the sites for the chains where I get brownie points - Marriott/Sheraton - Discover - Accor. And Trivago, Hotels.com, Trip Advisor, but there is too much information and its difficult to put real world interpretation on it. I was hoping for some suggestions based on a actual stays people particularly enjoyed and thought was worth the money that might inspire us.
