Winter weather is a gamble in most of Europe, including the south.
I spent NYE in a few different locations with varying weather. A couple of examples of what you can excpect:
- Portugal (Coimbra, Figueira da Foz). NYE, 18-20‎°C, sunshine. A couple of days later rain, cold and miserable.
- Spain (Alicante) - NYE and throughout the week nice sunshine, 22‎°C. I even took a swim in the sea.
- Italy (Bologna) - 14-16‎°C, light-jacket-weather, grey skies, no rain.

Dont worry about Jordan being too touristy - it isnt, no matter when you visit. It has for some reason an "its not safe to travel there status" which stops a lot a lot of people visiting. Personally, I felt very safe there, and I was there with a female friend, and we both felt safe and comfortable at all times.

We where there in so called high season, but even places like Petra where very much enjoyable. Jordan is really really amazing in my opinion. Its so very rich in culture and history, and then there is the wonderful Wadi Rum, and the great eperience of staying on the Dead Sea etc. etc. I cant recommend it enough.

If you choose Jordan, it's a pity to skip Petra.
You are far away from Ibiza or Thailand. It's not very touristic and as it's huge, you will be "alone" for a great part of your journey around Petra.

Also possible to arrive by air at Aqaba.
More easy for Petra and the Rum than if you arrive by Queen Alia.
