I'm planning to head to Segovia on Sunday for a daytrip from Madrid, intending to catch the first train there and last train back, is it an issue to buy the tickets at the station, or should I buy online in advance? And any recommendations on things to see (other than the aquaduct) and reasonably priced places to eat (student budgets) are very welcome.

No, the trains that go to Segovia from Madrid are called Cercanías, they are general commuter trains and don't allocate seats. No need to book in advance. The train will be mostly empty. They stop at many stops on the way.

The castle is nice, the view from the top is lovely.

There are many very nice resturants there, many people from Madrid just go there to eat.
