My boyfriend and I are planning a week in Lisbon either right before or right after Christmas. Will there be anything open during this time? Will hotels be available? What should we definitely do (and definitely avoid?)

The smaller shops and restaurants will probably be closed, and some larger stores will be closed or have shorter hours during the holidays. Hotels will mostly be open except for very small family-run hotels, which may close for part of the holiday period. Some hotels that stay open will have shortened hours for their services or restaurants.
As for things to do, make sure to visit the castle and go to Belem for part of a day. Ride tram 28 and go to a fado show. Here's a Lisbon Top 10 list if you want more ideas.
