There are plenty vintage shops, I can't sum up for you right now. But there is one market with loads of vintage clothes:
it's the Noordermarkt in the Jordaan at monday mornings. Be there early, it's a very populair market and the clothes and shoes
will be gone soon!
8am ish, and finishes about 1pm

Den Haan en Wagenmakers new made fabric but to traditional designs aiming for the quilt market
Noordermarkt was already mentioned, it's indeed a cool place for vintage. Some of the stalls even sell by the weight (you pay per kilo). Some are very cheap, some are expensive.
Otherwise you will mostly find vintage fabrics inside shops.
- Petticoat, Lindengracht > very nice and mos products at good value for money
Episode, corner of Waterlooplein (near Rembrandt House) > not cheap, ultra hip
Lady Day (one of "9 Straatjes" / 9 Little Streets... google it) > very expensive (often more expensive than the same thing brand new)
You could even try some of the Kringloopwinkels (recycling shops), for example De Lokatie. Most of what they sell is old junk but sometimes there are pretty cool items.
You may find more if you do google searches for 'tweedehands' (= second hand) + vintage / retro / kleding (= clothes).

P.S. I assumed that by fabrics you meant clothes, not (square) pieces of fabric. But all these shops may also sell square pieces of fabric. And also try the Waterlooplein fleamarket* itself, although most of it is new clothes nowadays... but some of the stalls very near Episode sell cool vintage stuff and seventies fabric for curtains / table cloths.
