For one day, ie less than 24 hours you will not have time to see much.
so just go to the city centre. It is a fine historical place.
You also do not state how you are travelling and that may limit replies.

Go to the Vrijthof, the central square, and visit the Sint-Servaas-church. Next to it there is another church where you can climb the tower. There is also a small museum on the square.

For 1 day Maastricht, you can 'do' the squares in the morning, don't forget the Onze Lieve Vrouwe-plein, which is cosier and less touristy than the Vrijthof. De Tribunal (at the beginning of the Tongersestraat) is a nice, typical Maastricht café, where in the evening you can meet the neighbouring Stage Academy's students (excellent, cheap sandwiches available at the stage academy). In the afternoon a visit to the casemates might be nice if you are interested in history. (Tours can be booked at the VVV, the tourist information centre). On monday there is vegan food at the Landbouwbelang, a squatters building near the river Meuse. Walk, on the west side of the Meuse northwards from the Wilhelminabrug and look for an old industrial building with the inevitable welded squatters art. If you don't like vegan food, turn left here and head for the Bassin area, where you can find some restaurants, or eat near the Onze Lieve Vrouwe-plein. The squatters at landbouwbelang can tell you if there is any party, but that is unlikely on monday. For more youngsters go to Café Zondag: head east over the St Servaas (the old) bridge, it is the corner building of the(i think) second block on your left hand.
