Next year I will make the pilgrimage from Oslo to Santiago de Compostela, following part of the way the Atlantic coast of Germany. Does anyone know of monasteries and/or convents in that area that accept overnight guests?

You mean the North Sea, right? Anyway, just out of pure curiosity: as you wrote "pilgrimage" - do you intend to WALK from Oslo to Santiago?

Yes, there are monasteries in Germany who take in overnight guests. This is a link to monasteries in Germany, but it is in German only.
Click on "Kloster auf Zeit"
then enter the postcode in "PLZ-Bereich"
in "Als Gäste werden aufgenommen" chose "Frauen" (women) or "Männer" (men)
in "Stichwortsuche" you can type in either a place or type of convent.

"Kloster auf Zeit" is not really what the OP is looking for. This means staying a period of time in a convent.
OP is looking for pilgrimage hospices, i.e. staying there just overnight.

Do you mean along the North Sea cost of Germany? Through Frisia? At least they don't kill pilgrims there anymore like (really a couple of) centuries ago. But some are still proud they did.

There are many ways of St. James (German: Jakobswege) through Germany (map) The normal route from Norway would be via Cologne (Köln) and Aachen or Trier (as they are all famous pilgrimage places on their own).
You can buy guides for many of these routes. There is e.g. one (volume 1 - Band 1) for the Cologne - Aachen route. And one for the Cologne - Trier route (volume 2 - Band 2). These guides are part of the Jakobswege im Rheinland (ways of St. James in the Rhineland) project. You can order also only the list of accommodation (EUR 5,00 - the guide is EUR 12,95). There are the typical accommodations and places ranked as "Pilgerherberge" (pilgrimage hospices). Not sure if there is a monastry among them.

There are a few monastries you can stay for a night, (e.g. Marienthal - but that's not on your route at all).

Best for such a project is probably to contact one of the St. James societies which I'm pretty sure exist also in your country.

if you manage to come along cologne etc. I would recommend Kloster Himmerod which is famous, and willing to accept guests and the monks are really nice!!! and the surrounding landscape as well as the church is nice as well. (http://www.kloster-himmerod.de/) only in German though. If you really want to go there you might write a pn to me so I might call them!
