I'm visiting my brother next weekend in Gutersloh. I heard that there's not much to see in Gutrsloh per se so I'm planning to spend one day in another city within a three hour train ride away. I'm tossing up between Hanover and Goslar at the moment. Any other suggestions, (other than Dusseldorf) will be appreciated as well.
Like any major city in Germany, Hannover was very thoroughly destroyed during WWII, and its citizens adpoted a lot of post-war ideas on urban design, so a lot of people would disregard the city or claim that you need more time to discover the hidden beauties.
Münster, on the other hand, did a lot of reconstruction work, so it's much nicer to our eyes nowadays. A vibrant university town, including a cahedral, in my opinion the easiest choice for a daytrip.
Goslar or Göttingen would be options, too, yet without knowing what you're actually interested in (arts, architecture, shopping?), it's difficult to suggest something useful.
