Would still opt for a ticket on a regular airline all the way to Bordaux.

Thanks again for all your information. I finally booked my flights and ultimately the options into Bordeaux, based on the rest of my flights and the carrier, were just too expensive. So I did end up booking the Stansted-Biarritz flight on Ryanair and will probably stay in Biarritz for the evening before heading to Dax the following day. However I managed to get a slighter earlier flight into Heathrow, so I now have just over 8 hours from the time I land in Heathrow to the time I depart from Stansted instead of the original 5 hours. 8 hours feels mentally comfortable to me, even if there is a slight delay in my inbound flight.
