I'm planning a day trip from Paris to Reims next week.
Considering that I'll arrive by train and will not rent a car, which caves should I visit?
Also, I'd appreciate some tips on how to spend an enjoyable day on a budget, such as where to have lunch, best way to move around (taxi?)...

To move around Reims has a tram way and public buses
We visited the Tattinger Champagne house in Reims last summer. It was the only cave inside the city, that you did not have to book in advance to visit. The tourist office by the Cathedral where very helpfull.

The Pommery Champagne House is an awesome experience. The estate's mansion is a French Chateau on a hilltop.
The caves for aging the champagne date back to Ancient Rome. The tasting room is Art Nouveau style. The icing on the cake is the champagne bar serving a multitude of Pommery champagnes.
You can walk to the Pommery House ( although a bus or taxi is quicker.
Don't miss REIMS' Cathedral where
The coronations of the French Kings took place.
The tourist office is just to the left of the cathedral, and the people there are perfect for finding you the right champagne tour at the right time in the right language. I went with my brother and (non French-speaking) sister-in-law a few years ago. Just walking in (out of season), they found us an English-speaking tour (at Pommery, I think) starting within 30 minutes. and explained exactly how to get there.
In most cases, the tramway is the best way to move around the city.
