I've been in Edinburgh a couple of months now but have yet to find cuisines like Moroccan or Vietnamese here. Would anyone have a clue on where to find these places (and hopefully not blow the budget for it too)?

Moroccan: a place near the Queens Hall, same side of the street
Kurdish: in Johnston Terrace opposite the Hub
Regional Indian: 9 Cellars in York Place
Sudanese: cafe near the mosque, only does lunches I think
South African: cafe near the Morningside clock, again only does lunches
Armenian: "The Monastery of Lake Van in Retreat" near Holyrood Palace - if it's still going (I haven't been there in years) it's the weirdest eating experience in Scotland
Polish: Pani Solinska in Broughton Street
Latin American - Cuba Norte in Morrison St
Several Thai, Turkish, Japanese, Nepalese - use the yellow pages. There's a new, small and very traditional Turkish place in Rose Street near the west end.
I've never seen a Vietnamese eatery here. Or one for anywhere in South-east Asia except Thailand.
If you want to try Iranian food get on the mailing list of the Edinburgh University Persian Society, they often run events with traditional food provided. Similarly look for Palestinian-connected events to try their food.
The Edinburgh Mela in the autumn is a great chance to try all kinds of un-British cuisines.

For "exotic" cuisines walk down Nicolson Street and the parallel street of Potterrow / Chapel St / Bucceleuch Street.

NB if you go to the Kurdish restaurant on Johnston Terrace, they don't sell alcohol but you are free to take your own.

Thanks for the great suggestions! I'm around the Nicolson st area a fair bit but have yet to see a Southeast Asian eatery though.

I ate at Hanam's (the Kurdish place on Johnston Terrace) at the weekend - really, really good. The lightest flatbread I've ever tried - dunno where this style comes from, Iran maybe? They're from Diyarbakir, but it isn't Diyarbakir-style bread.
On the night I went, the downstairs room was helluva noisy - we were upstairs and that was fine. It was too cold to eat on the terrace.
