Why not look into a bicycle tour company? Usually they don't require a high degree of bicycle proficiency if you are reasonably fit. Otherwise, there is a company called Paddywagon that caters to younger people and backpackers.

Hello ~ I'm also looking for how to see Ireland without having to rent and drive a car -- I'm in Galway Aug. 6 or so, and have about 4 days free from there. Any thoughts? Thanks ~ Tina

For poster #3. There are many day trips you can take from Galway. The easiest way would be to check at the tourist office, and do organized trips. Some top destinations would be the Aran Islands, Kylemore Abbey, Cliffs of Moher. There are many more.
You can also easily organize your own trip to Inishmore Island through the tourist agency, or before you go. It entails a bus trip to Rossaveal and a ferry ride to the island. Personally, I think overnighting on the island is a great idea. Public transport would go to many destinations around Galway, such as Clifden, Doolin, Outerard, Cong (my personal favorite, although quite quiet). The coastline around Galway is beautiful to see.
Frida, thank you SO MUCH for mentioning Paddywagon Tours!! It's the answer I've been looking for, and I've booked a trip with them for next week. I'll be the oldest one on there, but I'm used to that, and really thrilled to not have to drive or piece together with public transportation. THANK YOU!! ~ Tina
