Here's a rough itinerary I just made up right now. Is this too much for what time we have?

July 2nd - evening/night in Dublin

July 3rd: Dublin - Cork. (3.5hrs)
On our way to Cork, we could stop at the Rock of Cashel and/or Cahir Castle.
Blarney Castle is just a few minutes outside Cork.

July 4th: Cork - Killarney (1hr 15min drive)
Ring of Kerry

July 5th: Dingle Penninsula

July 6th: Killarney - Cliffs of Moher

July 7th: Cliffs of Moher - The Burren: 30min drive
Medieval Banquet (sometime when we're in Co Clare)

July 8th: Doolin Caves & Inis Oirr (Aran Island)

July 9th: Doolin - Connemara: 2.5hrs drive

July 10th: Connemara - Dublin: 4hrs drive

July 11th: Fly home at 9:40am

In my opinion, you have too much planned. You have about 10 days and want to see Killarney, Ring of Kerry, Dingle Peninsula, Burren, Aran Islands, and Connemara. You're not leaving enough time to enjoy any of them. You should concentrate on 3-4 of these things. A couple other things: the Medieval Banquets fill up quickly, you need to book in advance. Also, ferries from Doolin to the Aran Islands are weather-dependent, and not always reliable. Is there a particular reason you want to stop in Cork City? It's hassle to navigate, and not particularly interesting. I believe you have somewhat underestimated driving times in Ireland. You should count on covering about 35 mph.

Here's an update to the itinerary. It's changed a bit. How does it look now? My wife didn't want to do the ring of kerry since it looks just like where we live on our island here anyway. Instead she wants to go up north to the Giant's Causeway & a couple other places.

July 2nd - Dublin Airport - Kilkenny/Inistioge

July 3rd: Kilkenny - Rock of Cashel (55min)
Rock of Cashel - Cahir Castle (10min)
Cahir Castle - Bunratty Castle - Medieval Banquet 8:00 (1hr 20min)

July 4th: Bunratty Castle - Kilfenora (The Burren) (1hr)
The Burren - Cliffs of Moher at sunset (30 min)

July 5th: Kilfenora - Doolin Caves (30min) (1hr tour)
Doolin Caves -Connemara, Galway (2.5hrs) {afternoon explore Connemara region}

July 6th: Connemara & Inishmor (Aran Island Arainn) (7min flight) {late afternoon flight?}

July 7th: Inishmor - Connemara {late morning/early afternoon}
Connemara - Slive Leage, Kilcar, Donegal (almost 4 hrs) {Kilcar is 45mins from Donegal}

July 8th: Donegal - Giants Causeway and Bridge (2hrs 22min)

July 9th: Giant's Causeway - Newgrange (2.5hrs)
Newgrange -Dublin airport (45min) {return car today}

July 10th: Dublin

July 11th: Fly home

That plan looks somewhat better, although still a lot of travelling. It looks as though you have not included any 2-night stays, which can bbe very wearing. Unless you definitely prefer that kind of traveling, I'd recommend staying 2 nights in at least 2 locations. It looks as though you plan staying in Kilfenora July 5, on Inishmor July 6 and Donegal July 7. That is quite rushed, esp. July 7. Presumably, you plan to leave the car and actually look around, and you won't have much time for that.
