i've heard oliver st. john gogarty's is a fun, safe, and cheap place to stay. doubles as a hostel/hotel and popular pub. it's right in the temple bar district.
i stayed at abigail's not too far away. it was decent. cheap. safe for one person for one night.
but yes, you'd be best doing some research on the hostel websites. there are just too many to list.
