I have two weeks off work in November and I'd like to spend one of them somewhere in England. I'd like to avoid the bigger, busier cities and rent a room somewhere where I can relax and do a bit of exploring, hiking, day trips and the like. I'll be traveling alone from the US and am looking at Cornwall or somewhere in Wiltshire county at the moment. Any recommendations, advice, suggestions, etc would be greatly appreciated.

Cornwall and Wiltshire are both lovely but are you going to be driving or using public transport? Wiltshire would be easier to get around by bus or train as Cornwall is notoriously difficult to see much without a car. Cornwall in November can be very wet and windy but nice in its own way to walk and watch the wild seas!
Without a car, I'd choose Falmouth as it's on a train line to Truro, the main town, which you could use a hub. Truro is nice, but Falmouth is on the sea and offers more easy walking,things to do and see and boat trips, if you're lucky and has a huge array of both accommodation and restaurants, though some shut for the winter. It's also very pretty and quiet enough in winter, though as it has a student population doesn't feel dead, like some seaside towns.
Cornwall is long and narrow without good roads so getting about takes longer here than it would in Wiltshire but the iconic places to visit are St Ives, Kynance Cove, Mousehole, St Micahael's Mount, Padstow, Fowey, Port Isaac, IMHO.....

I suggest Norfolk (Norwich). I don't know whether you will be able to rent a room for a week - consider staying in a Youth Hostel , it's not half as bad as it sounds.

I suggest the Lake District.
It's one of the few places in the UK with a 12-month tourist season, ie it'll be open in November! Keswick is a good base, especially if you don't have a car, as there are various possibilities for day trips. Countless hiking routes including plenty of easier walks as well as the high fells. Some architecture and culture.
I think the YHA in both Ambleside (Lake District), and York could be pleasant for a week ... I mention them because I've stayed three nights in them recently.
The other area that may be attractive to you is the Cotswolds or Oxford. But as noted above, a lot of this depends on whether you plan to have a vehicle.
