Headed to Akureyri in late Feburary......want to dog sled........recommendations for a musher (few hours)?

If I was in Akureyri in February, I would go skiing to Hlíðarfjall.
For sightseeing, Myvatn is more interesting than Akureyri but if you wanna stay in Akureyri (town), you can join a mini bus tour and do a day trip to Myvatn. I think there is enough to see for 2 days at least. Depends a lot of the weather too. Some days can be extremely cold because the wind and temperature, some days just fine. Also if there is lots of snow, not all the places are possible to enter. However, it's very beautiful place on winter.
I've never been on dog sled so can't help with that. But I could imagine that's the same as everything else: Can be nice if the weather is not too Icelandic (windy and cold or raining ice bits).

There is no tradition of dog-sledding in Iceland. It's a Greenland thing, and north Greenland at that. The thing is, you traditionally do it on sea-ice, and there isn't any of that around Iceland. However it is available for tourists. I think they mostly go up onto the ice-caps to do it, at least if the lowland snowcover isn't adequate, and it can't be guaranteed even in midwinter. But my recollection is that there is only one operator, and he's nowhere near Akureyri. http://www.dogsledding.is/ You will find other people apparently offering it, but they are generally agents for this operator. It's always possible that some competition has now arisen if you search diligently for it.
Myvatn is the real winter tourism centre in north Iceland. If you stay in Akureyri, you'll just end up commuting the 60km each way to Myvatn, where there is most of the winter tourist stuff to do. Though at least in Akureyri you'll have a choice of restaurants.
