I'm an American living in Israel and considering visiting Russia via Kiev in May. Can anyone tell me what the price for a single entry visa for a period under a week is going for nowadays?

Here are the visa fees at the Washington DC embassy. Probably going to be similar if you get a visa in Israel.

The fee is $160 for any visa, from a Transit Visa for 72 hours or a 3 year multiple entry visa and all in between. Not all consulates are able to issue a visa for a foreign national unless that have resident permits for the country they are applying in. In the past, it was possible to get a visa in Kiev at the Russian Consulate in 10 days without being a resident of Ukraine and in Warsaw without being a resident of Poland but not the surrounding countries. Not any more. In fact you are likely to get extra scrutiny as an American living in Israel and traveling via stops in Kiev.
If you have a residency permit for Israel, you can apply there before your trip but otherwise you are supposed to apply in your country of citizenship. Contact your local Russian consulate in Israel for the latest information. Israeli citizens are are permitted entry under a visa waiver program.
