So, I got my invitation, I filled out the application form (twice) I glued my photo to it, and I got turned down because my travel insurance documents don't have a rubber stamp! Apparently, I need a signed attestation, so I'm going to go to a travel agent here in Paris and buy some. Does anyone know any reputable ones?

The consulats issues a list of insurance companies. Study this list. If your insurance company is on that list, its OK. The the consulate has a form which you have to send to the insurance company (after YOU have filled in all details). Then the insurance company confirms your dates and will send the form back to you, signed and stamped (Make sure that you have sent them an addressed envelope with a postal stamp).
If you don't use a company that the consulate finds acceptable, they will refuse you. The company must specifically cover you in Russia during the time period when you will be there.
When asking visa questions, it is useful to indicate your passport. The French require travel insurance to visit Russia but US, UK and a host of other passport holders do not. It is possible that the consular officers in Paris are accustomed to dealing with French citizens and expect to you to have proof of insurance when you don't really need it.
