Wait until you get to Croatia.

The best thing to do is bring your ATM card, and withdraw local currency upon arrival at the airport. Check with your bank to let them know you are traveling, and to inquire about fees. Typically, you will get the best exchange rate available, so any fee your bank charges (probably somewhere between 2-5 euros, roughly) is worth paying to get the good exchange rate. Also, the ATM card allows you to withdraw currency as you need it, so you avoid having to carry around large stashes of cash.

100% with #@1.
Don't even consider getting your Forex in the UK, whether Kunas, €'s, $'s or anything else.
You can pay in €'s at many points but the rate might be a bit dodgy, although probably still better than in the UK again. You'll do better using your plastic if you have some, though.
Check out Caxton FX, Nationwide Select Credit Card and Halifax Clarity Card. All 3 don't charge for foreign transactions, when both purchasing goods or making cash withdrawals.
