Hi

Got engaged about a month ago and are now planning our wedding, we are wanting to get married in Croatia at the end of August 2009. Has anyone any hints or tips? We will have about 30 people joining us.

Find out what the local laws require. Croatia is not part of the EU, so EU laws don't apply. It varies from country to country around the world, but some have residency requirements that require you to be in the country for X number of days before getting married. Some don't have any requirements except fill out some forms and pay some money.
If you're a Brit, are there not wedding planners in the UK who can help you with this?

Foreign citizens in Croatia can be wed only in churches.
For a marriage to be valid, it requires also a civil registration, and that can be done later in your country.
For more details contact your diplomatic representatives in Croatia.
