First - thanks in advance for any and all advice. I'm usually a great trip planner but this trip needs some love.

My husband and I (mid-30s) are taking our first adventure with our soon -to-be14 month old daughter to Spain and Croatia in August. Spain is sorted out but I need help with Croatia. We love to hike, although we won't be able to go all day like we used to. In addition would like some relaxing at a beach, strolling through nice cities and towns, good food...We also want to limit as best we can the number of different places we stay so that it is easier on my daughter. She currently naps in the morning and afternoon but might be down to one afternoon nap by then. We fly into Zagreb and out of Pula and plan to rent a car. Here is what we are thinking:

Aug 28 - Arrive Zagreb mid day
Aug 30 - Head out in the AM for Plitvice NP.

Sept 1 - Drive to Split and stay for a few days exploring the area
Sept 4 - Drive to Zadar, stay one night (maybe hike at another Park)
Sept 5 - Drive to Istria (Pula, Rovinj, other places?)
Sept 10 - Fly out early in the morning from Pula

Would love feedback on the itinerary in general, small hotel/apartments in each place for around 50-60 euro/night, other things to see/do in Split area and Istria. Also any good car rental companies.

Split: Trogir is an attractive old city.
and Salonae, the Roman area is worth a look.
You can get a free Split card if you are staying for three days. Good savings.

I just came across your question....
You have structured your itinerary quite well.
I would only add Kvarner region: it has a long tradition of tourism and is quite a gem.
With a car, try staying in Gorski kotar: it is in the mountains, with great climate (always cooler than the coast, i.e. great for sleeping especially for your Angel, and you might as well do some hiking while there (Zeleni Vir, Vrazji prolaz, Skrad). In Kvarner region, Opatija, Ika, Lovran - are must see, and so is Krk island (connected with bridge - so you just drive there).
And after a couple of days just continue to Istria. Istrian inland is very, very charming. You may try www.sinkovic.hr
