I am a freediver as well, and travel every year to go train in various spots - just finished a 5 month holiday (including Freediving in egypt and the philippines).
I never went to central america so no idea where you can train there.
If you go to Africa, you should definitely go to the Red Sea, in Dahab, Egypt, with Freedive Dahab - www.freedivedahab.com (SSI and AIDA school). I go there every year and it is the best freediving spot I've been to for training, by far. Courses/training run daily, it's very well organised, a lot of freedivers go there, you can learn a lot, and the Blue Hole is just so protected and majestic it is freediving heaven! All you have to do is walk from shore and you are in very deep, blue, warm waters with a good reef. Here are a few photos: http://bit.ly/obdvql
If you go to SEA:
- If you are hooked with Thailand and want to go back there, you should check Blue Immersion (http://www.blue-immersion.com) in Koh Tao, Akim is a really good freediver (diving 100+, he used to live in Dahab) and running SSI and AIDA courses almost all year long. I went to Koh Tao and found it good, although I would prefer to be able to go freediving straight from the shore without having to go out on a boat.
- Moalboal, Philippines, is sensational! For depth training For fun freediving and exploring reefs, diving with turtles, you can't beat Moalboal. There's a reef with a great drop off 50m from shore, with depth ranging from 30m to 50-60m right there. If you swim another 100m you are in 70+. And the reef is so alive it is mind blowing!
