Your favourite (and most obscure) Greek foods?

I am hoping to walk across Northern Greece (from shore to shore) in the spring of 2009. Being a food fan I am really keen to try as many local specialities as possible along the way. Does anyone have particular favourites that are different from (or maybe a twist on) the well-known Greek dishes??
