Smashing Pumpkins did a cover of Britney Spears "Piece of me" (if that's what it's called) which was awesome. I've been trying to find a clip but my internet connection is so slow I can't watch any videos. If anyone finds it, please post it - it was fantastic, a really heavy metal version!

And-- should I be embarrassed to know this?-- Pieces of Me is the title of an Ashley Simpson song, not Britney. I don't know about the Smashing Pumpkins cover, though.
A lot of bands have covered Rihanna's Umbrella... I kind of like the Mandy Moore version.

Gary Jules cover of TFF's Mad World. The video (all one long shot, used in Donnie Darko) is spectacular too.
Ryan Adams' cover of Brown Sugar was interesting.
