I plan on arriving to Fiji in mid February and am interested in spending a few nights at preferably the Octopus Resort on the Yasawas (Oarsman's is an option too)! I know that February is generally not tourist high season on Fiji, so I was wondering if it’s absolutely necessary to make a reservation far in advance! I'd prefer staying in a private bure instead of the dormitory btw...!

The reason for my question is obviously that I want to stay as flexible as possible, schedule-wise...! I know that it's obviously not possible to guarantee anything! I am just wondering what people who have been there in "low season" are saying! Any hints?

There is no low season at Octopus any more. They have done such a good job that they are running at close to 100% occupancy and if you're interested in going there book now.
If a bure is not available then look at the new lodges which have been built by the dorm - they share the dorm facilities but you have a private room with your own sun-deck, queensize bed.
