Hi Nadi, is a transit town at best. Christmas time will be hot and cyclone prone (hopefully not when you girls are tearing up the place!) The nightlife is very 'pacific-style' at best so if you'd prefer more western style consider a cruiseboat cruise from Oz to Fiji. The potentially rowdiest at night might be Beachcomber for a few days but you may find it kinda young, that said you'll still enjoy yourself I'm sure, and then going beyond that heading up to the Yasawa Island group for a much more relaxed few days at one of the many 1 star resorts that line the boats path (Octopus is a good choice). Fiji is great and the night fun kinda tends to just happen depending on whos whereever you are. It's a pretty conservative place and certainly a great place to meet interesting folks and chill right out. Book soon for Christmas as a lot of the smaller places will definitely book out. Have fun!
Beachcomber is probably a wee bit young for the young at heart. Uprising on the Coral Coast, Pacific Harbour, is amazing for the young at heart in their 30ish. Beautiful beach top accommadation and only 34mins to the city if you needed a break from lazing on the beach doing nothing. Great nightlife. I live in the area and believe you are the right age for this beautiful resort. You could also do river trips, boat trips out to coral heads for snorkelling and lots more fun this. There's nothing remotely like what you want in Fiji-not even close-try Thailand.
"night fun kinda tends to just happen" - Yes , but it tends to be family fun as a rule, except for the teen drinking type at Beachcomber etc
One other suggestion for "nightlife" is the various posh (5 star ) hotels on Port Denerau - Westin, Sofitel, Sheraton etc. They eacjh have music at night and the Sheration especially could be suitable.
All the above said, I agree with #3 tyhat Fiji isnt really the place for clubbing

Nadi is not a good option if you want decent beaches. I second Octopus resort in the Yasawas, although I don't recall it having much of a night life (just groups of people hanging out listening to music). They have accommodation in a variety of price ranges (I stayed in the dorm, which was clean and comfortable).
Beachcomber has more nightlife, but it was a younger crowd and the beach wasn't very nice (you could only swim at high tide and the water was quite shallow).
