Weather - Times to Visit

Australia is as big as the 48 American states, there are different weather patterns. You have to be more specific.

Shouldn't be too much humidity anywhere between those months. Be it Australia or NZ. By May, the further south you go, the cooler it is getting.

March-May are probably the best 'middle of the road' months for Australia generally (outside the wet of the north, mostly outside the high 40s of Sydney/Melbourne although you might want to go later, outside the colder months of Tasmania). The other option would be Australia's spring although they are the wettest months of Sydney/Melbourne.

7/8 days is not enough to do both or even much, so pick either New Zealand (and maybe even then the north or south island) or a capital city in Australia and one or two tourist highlights (Uluru, Great Barrier Reef, the Giant Pineapple/Lobster/Worm - it is hard to know since we know zero about your interests).

Western Australia is on average one of the hottest states but the southern half has the benefit of having a very dry heat, as it comes off the desert. We've been there often in March to May and have loved it. It can get chiller at night but only inasmuch you might need another layer to sit outside.

With only 7 to 8 days, it would be madness try and see both Australia and NZ. IMHO, you need a minimum of two weeks in Australia alone.
