Has anyone stayed here? The rooms state they have an 'open-plan' bathroom. Doesn't sound very appealing!

An 'open-plan' bathroom usually means that the vanity basin / bench aren't inside the bathroom, but in their own alcove or corridor space, contiguous with the bedroom, while the bath/shower and toilet are located behind the door.
It works quite well ... I expect you'll survive it.

I rather doubt that ... one of the major challenges for a hotel is extracting hot moist air - so they try to keep the bathroom as compact as possible, and with a door between it and the main space. I think the external vanity area, and enclosed shower/toilet, is what you might find.

i've standard in hotels outside australia, which certainly have open plan bathrooms, incl in expensive hotels on a work trip. its expansive for the mind. its only you to be open!
whether it appeals or not is only a reflection of your background.
