Hi, I'm a British girl currently travelling southwards through Central America. I would like to go to Australia to do the working holiday, save up and then return for South America however I have a few questions as the process seems very confusing! The application mentions both a police and health check? Are these always asked for and if so, would I have to return to the UK to carry them out? Any other paperwork which would require me going home? I'm hoping to not need to return home but I'm not sure! Thanks!

I am not too sure you have been reading things correct for usually ( some exceptions ) with the WHVs there are no police or health checks required so is it the 417 Visa you have looked at - https://www.border.gov.au/Trav/Visa-1/417-#tab-content-1 and if you go to the written application form - https://www.border.gov.au/Forms/Documents/1150.pdf you can read all the form first and on page 9 there is a reference for health and on page 10 re character.
So, for starters, you can as a UK citizen apply online and then depending on how long you have been outside of the UK and where, you may be required to do a medical examination and they can be done all around the globe, there being a medical examiners listing by Australian Immigration.
At the stage of your online appication, unless you start ticking a lot of YES boxes re being a bit on the naughty side, there will be no need to have a Police Check done ( where have you actually seen that requirement? ) and if it did become the case, you could arrange that with the local constabulary back where you were living in the UK.
Other than a health examination requirement if you have been away from the UK for more than three months in Central/South America ( and you will be advised if it is necessary ), you should be fine with an online WHV application.
There are of course some stipulated financial requirements but if you have access to a credit account with adequate funds, that is sufficient.
