working on the East Coast

This has probably been asked before but I couldn't find it in my quick search so I apologise in advance.

I am from Aus and I am trying to convince a couple of friends that I lived with in Spain to spend part of their gap year here. they comes, they will probably spend 4 or 5 months making their way up the coast from Syd/Mel to Cairnes.

The problem is money. How easy is it to find bar/hostel/fruitpicking jobs just for a couple of weeks or a month at a time while travelling? This is my selling point and I say that all the Brits and Germans (and other Europeans aswell) do a similar thing. But I don't want him to get here and not be able to find shitkicking jobs on the way.

p.s Is it as easy for a Pol, Hungarian and a Bulgian to get a working holiday visa as it is for a Brit.
