I've looked through all of the links and information on the FAQ's, it has been very helpful. Aside from the information already posted, can anyone provide me with suggestions of agricultural work in Victoria beginning in the last week of May/first week of June? I'm aware it isn't the right time of year for harvesting most crops, but perhaps there are some farms I have overlooked. Does anyone have first hand experience with some form of agricultural work in this region at this time of year? Can anyone recommend good farms they have worked on in the past? Does anyone have experience in this region planting trees (ideally it is what I want to do once I arrive).
I have sent my CV/resume and letters of interest to 3 tree planting companies which have contracts beginning at the end of May. I appreciate and understand why they may not be inclined to hire someone who isn't yet in the country, but I fear they will most probably complete their hiring before I arrive and can apply in person. Is it uncommon to find tree planting work a couple weeks after the contract start date, due to some first time workers giving up... or do most teams start and finish the entire contract?

If you want to get the 2nd year WHV, don't do tree planting yet.
Do the true fruit work, not necessarily in Vic, but anywhere for that 3 months, then after that, do your tree planting bizzo.
Go West or North, if it turns out that there is nowt near Melbourne.
In the riverland, it might be worth trying for winter mandarin picking..., though with the shortage of water, it might be that orchards or fruit farms are scaling down their harvesting and letting more fruit fall au naturale.
Unless we get much more winter rains, the water will be the downfall of the fruit industry.
Tree planting is not in the WHV 2nd year list, I don't think.

daycat... why not do tree planting "yet"? As far as I understand, tree planting is considered seasonal work that can be counted as credit towards my 2nd WHV application as long as "the planting or tending of trees in a plantation or forest are intended to be felled".
