A further alternative you may not know about is the very popular (in summer) Overland Track in Tasmania. Beautiful country.

Trav makes a good point ... it's worth not underestimating how hot the Australian sun can be in January. But sensible precautions will be fine.

I have walked several sections of The Great Ocean Walk a number of years ago. The track is well sign posted. There are on track camping spots. There are basic facilities at each camp site (drop toilets, kitchen shelter and tent sites). Tent sites are limited so you need to pre book with the park authority. For an experienced walker with good preparation you could do it by yourself. It is a popular walk so you will see other people on the walk There are a number of local businesses who can organise drop of and pick up services
