Hello everybody, I will be visiting Thailand between 15-31 September and I am currently trying to figure our my itinerary.

I am aiming to avoid the main touristy hotspots and concentrate mostly on nature and landscapes. I would also like to visit some good national parks and rainforest(if there is any remaining)

Many recommend visiting the Khao Sok National Park. Has anyone been there and would you be able to give me some advice regarding other parks in the north?

Self drive, explore Kanchanaburi and the parks on the way up to Chiang Mai.

^^ wouldn't disagree with that other than the route from Chiang Mai to Kanchanaburi doesn't have any parks along its route until you get to Lampang.
Route 323 up to Sangkla Buri has more to offer with parks that are virtually unknown to tourists. http://www.anachak.co.uk/off.the.beaten.track.php?page=5
Khao Sok is always proposed as the best national park in Thailand but it is a long way south with little else to offer if what you want is a jungle experience even though there are other parks around that area. Khao Sok is also very touristy IMO.

If you have time, explore the parks along route 323 and then double back and head north to Si Satchenalai and Mae Tuen

Khao Luang NP in the south as well. Chae Son in the north.

Erawan in Kanchanaburi.

The alternative route to Chiangmai with plenty to see, is the 3086 to Dan Chang and onto to Kamphaeng Phet

Steve I thought that was a good read.
Huntsman's missing legs may have lost them just by moulting - doesn't matter though he can grow new ones and if one fell on your face a heart attack is the least of your worries. They have a hell of a sting!

Thanks for your kind words Anachack! I hope you are not talking from personal experience. A bite from one of those huntsman would be terrifying!
