With regards to money, we are thinking of taking £1500 each for the month. Does anybody think this is too little/too much?

It is a hell of a long way to Phuket by bus. Flights are cheap - Airasia usually less than 1000 baht for internal flights.
I realize you didn't mention going there but in case you have a change of mind, forget the gulf islands (Samui and co) coz often wet at that time of year.
Chiang Mai prob be cool in the evenings at that time - pack a jacket.
Easy to find accommodation - use your legs.

Avoid tuk tuks in Bangkok. Cabs are cheap and if you hail one from the street you should not have a problem about the meter. Do not get a taxi that is sitting around somewhere - he is looking for a sucker.

I have taken the bus to Phuket many times. Get a VIP and have leg room, plus incline seat. Saves having to pay for hotel one night.
Mind you I will never go to that $%&^^%$^ again!

I used to take 1,000 pounds for a month, so 1,500 should be plenty and if sharing a room it's same price for two as for one.

I have never known Chiang Mai to be cold enough for a jacket in November. In December I might put a sheet on the bed, but that's it. If going up Doi Inthanon, might be cold though.

I'd recommend Krabi over Phuket. It has developed quite a young people's scene that's not too wild. You can take boats to Railly for day, maybe up to Phangnga for mangroves and sea trip. Then Koh Lanta for budget island beach time.

AirAsia good for flights, check out website or app for early booking. Definitely do at least one train sleeper.

Pack light, you don't need a 60 litre backpack, but you will need a folding umbrella.

I think you will find Phuket a bit much after being in CM--Its pretty much a Package tour type feel--Agree that Krabi would be a better choice for a backpacker
