I am getting to Bangkok on Monday the 16th, I am not a huge fan of Songkran, but understand that puts me in a minority. My question is; will be the water splashing be pretty much done by Monday on KSR or is it more of all all week thing?

13-15th is the main event so you'll be mostly in the clear by late Monday, except perhaps for a few randoms who forgot to say "enough".
Water splashing is being too kind. I have seen a policeman sitting in a bus drenched from head to foot. He copped a full bucket of water.
Best Songkran I've had was on Koh Samui when it rained every day of it and more each side.
You will have to avoid KSR and maybe Rambuttri if today is anything to go by for Monday.
Not as crazy as the main days but still next to impossible to stay dry on those main spots today, even if the official start is tomorrow.
Monday might well be the same.
