Sorry if this question has been answered elsewhere. I looked though past posts and FAQ, but there is so many I may have missed something!
I am an Australian traveling to Vietnam in November. I have applied for my visa and had to fill out the date on entry (overland from Cambodia) and date of exit.
What will happen if i enter the country a day or 2 later than the date i have provided and do not exit the country until a few days after the date i provided?

Nothing for entering late as long as it's before the exit date on your visa. You still have to leave before the exit date on your visa, you cannot stay later unless you get an extension on your visa whilst in Vietnam.
A couple of people i met last year in Vietnam left Vietnam 2 days late and got fined $50 each for it, which was more expensive than getting a 30 day extension on their visa.
It's very simple, your date of entry will be the date from which the visa is valid, you will then be stamped in for 30 days, regardless of the date you entered as exit date, as the visa validity will be 30 days. If you arrive later then the arrival date, this will be deducted. So let's say you enter 3 days after the arrival date (or the visa valid from date), you will only be allowed to stay in Vietnam for 27 days. This will be reflected in your entry stamp, there's a until date.
