Hello, I will be traveling to Vietnam for the first time in August. I would like to see as much as possible in 3 weeks. These are the cities I was thinking of: Hanoi, Sapa, Halong Bay, Hue, Hoi An, Nha Trang, Dalat, Saigon. I don't think I will have time for everything because I will be meeting with some frineds family in Saigon for the last 4/5 days. In your oppinion, what city should I cut out?

Cut out Nha Trang and Da Lat.

If you visit Sapa then you don't need to add Da Lat in the list. Sapa has more beautiful mountain scenery and colorful ethnic minority groups. For a week it's possible to visit Hanoi, Ha Long bay and Sapa. Then you'll spend a week in Central VN and head south. The last week you'll be with your friend's family.

You can visit a beach in either Da Nang (My Khe beach) or Hoi An (Cua Dai beach) instead of going to Nha Trang.

Well, you can do a Highland tour from Nha Trang in a jeep or moto rental with guide, to Dalat, see temples etc, and then on to Saigon. But, Mui Ne gets lots of rave reviews for a beach town...

Doc Leth north of Nha Trang is very nice, few tourist and laid back as well....Paradise Resort or Jungle Beach is nice a few days...surrounded by fishing villages, and nice locals.
