I have a 30 day visa for vietnam and was wondering if anybody has ever tried to get into vietnam earlier than the date specified on their visa? I know I can ask to alter the date at an embassy, but it costs extra.

You cannot enter earlier than the specified entry date.

I doubt there is any country that would permit you to enter before the specified date on a visa!

This is the reason why you shouldn't apply for the visa until you know the date of entry.

And if you are flying in, the most likely outcome is that you would be denied boarding and not fly at all.... airlines are responsible for making sure their passengers comply with immigration regulations.
