What would be your preferred way of travelling between these two cities? I hope to leave Vietnam at the end of Jan, just before Tet. I'm not in a hurry and don't like spending too much money!

Well if you have plenty of time you could always walk it is free! The bus takes 6-7hrs and is not expensive.

Bus directly between the cities is the fastest and cheapest way. An alternative is to combine HCMC with a visit to the Mekong Delta. Then afterwards, from Chau Doc use a speedboat service on the Mekong river to reach PP in roughly 5 hours time.

You can very easily spend 1-2 weeks traveling through the Mekong Delta and leaving Vietnam via Chau Doc, or via Ha Tien to Kep and Kampot in Cambodia.

Thanks all. Bus it shall be. I'm hoping to cycle around the delta region for a few days but walking to Cambodia doesn't excite me!

More info in your post might have been of help, there are plenty of options nearly all cheap but basically you head straight between the cities or you combine the delta area in Vietnam and/or the Kampot/sihanoukville part of cambodia before PP
