Am I Ok to plan on flying into Mandalay from Chiang Mai and leaving via Mae Sot or the further south border crossing by land on a tourist visa? Anyone have recent experience?

yes....enter via any land or air entry, and exit via any land/air entry..
(unless you have an E-visa, which can only be used for air entries, at this stage....but you can then still exit via land)
