Hi All,
at the beginning of next year we'd like to go to Asia to have white
sand beaches, not many tourists, no nightlife, good swimming and
snorkeling possibilities.
Would you suggest us Sihanoukville or better any of Thailand beaches
or maybe Phu Quoc in Vietnam?

We've been to Kep, which is a small fisherstown in Cambodia. Great krab btw. this is quite touristy but not nearly as touristy as Sihanoukville. We disliked Sihanoukville, we thought it was touristy, dirty and had a lot of old white men walking around with young asian company (if you know what I mean). We left immediately! A friend of mine went in the low season and throught it was fantastic though, and had a great time there.
At Kep you can do a boatttrip to Rabbit island, which is a very small island with white beach. You can stay there for a couple of nights! very serene and awesome. White beach, good swimming, have not snorkled so wouldn't know.
In Thailand I loved Ko Chang. One side is touristy and has some nightlife, the other side is totally serene and beautifull, rent a Scooter and explore!
Almost anywhere except Sihanoukville will meet your criteria!
As above, there arealso some nice beaches on the coast down from Trat to the Cambodian border and there is a nice quiet beach about 12 Klms from Koh Kong.
I went to Phu Quoc a number of years ago and it met all your criteria. Not sure if it has changed much since then through.
Not sure about other places but Phu Quoc Vietnam is perfect for your choice. It's still a new destination in Vietnam so it's not touristic and has beautiful beaches and for swimming and snorkeling.
Whilst Kep is a great town, the beaches are not. Sihanoukville is indeed not very nice but there are nice beaches on the nearby islands.
Phu Quoc has nice beaches but I think the ones on Con Dao are nicer.
INMHO, none of the above beaches come close to some of the nicer Thai beaches.
There aremany great beaches in Vietnam, such as Phu Quoc, Con Dao or Bai Tram beach ( Phu Yen). Three of them are good options for you. In Con Dao, many resort are good ( Salinda resort, Famiana resort and Vinpearl resort is coming open at the end of this year) . In Phu Yen has a nice resort is Bai Tram resort. In Con Dao is Sixsenses resort , SaiGon Con Dao resort. Can fly direct from Hochiminh city to Phu Quoc, Con Dao or Phu Yen.
